Turkey Bacon and Lentil Stuffed Peppers
Cooking Time 25 – 35 Minutes
Serves 2 (with some Lentil mix left over for lunch the next day)
... Ingredients:
2 x Peppers
1x Small Red Onion
2 Cloves of Garlic
6 -8 Rashers of Turkey Bacon, chopped
1 tsp Cumin
1 tsp Chilli Power ( Mild / Hot depending on personal preference)
400g Tin Chopped Tomatoes
1tsp Oregano (Fresh is best but dry is just as good)
100g Bulgar Wheat / Quinoa (Cooked)
100g Lentils, cooked ( I used Puy Lentils but any type will do)
Green veg of your choice to serve
